Rinse the shrimp under running cold water. Add them to a deep bowl and pour wine over them, completely submersing the shrimp. Cover the bowl, and allow the shrimp to soak up the wine. Put a medium-sized pot of water on the stove and bring it to a boil. Add ginger. Remove shrimp from wine and add to boiling water and stir. Once water returns to a boil, cook for one and a half minutes and immediately pour them through a strainer. Serve with soy sauce for dipping and enjoy!
